These elegant Mini Raspberry Snow Cakes are the perfect ending for your next holiday gathering. Less than 1 hour to prepare and completely delicious! Sprinkle with powdered sugar and serve warm.


  • 10 NESTLÉ CRUNCH Jingles, unwrapped
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) butter or margarine, softened
  • 2 large eggs
  • 1/4 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 1/4 cup powdered sugar


PREHEAT oven to 350° F. Grease 10 muffin cups.

BEAT granulated sugar and butter in large mixer bowl until combined. Add eggs, evaporated milk and vanilla extract; beat until blended. Stir in flour and salt. Gently fold in raspberries. Spoon heaping tablespoon batter into prepared cups; place 1 Nestlé Jingle in each cup, pressing down slightly. Spoon heaping tablespoon batter over each Nestlé Jingle, covering completely.

BAKE for 20 to 22 minutes or until cakes are golden brown around edges and top is set. Cool in pan on wire rack for 10 minutes. Run knife around edges to loosen; gently invert onto serving plate. Sprinkle with powdered sugar; serve warm.

A Little Disappointed


These were easy to make and looked very appealing. However, I was disappointed with the taste. I just felt like something was missing. My husband liked them but said they could use some frosting. I think I will try them again with some adjustments.

Wasn't impressed

I was not impressed with these. I was expecting a more moist cake texture and they turned out harder like a biscuit tea cake after following the recipe exactly. I think they would be better with another kind of fruit.

I made this recipe to see what they taste like before I have my inlaws over for christmas, very easy to make and absolutely delicious. I used strawberries instead they came out wonderful.

Quick, easy and elegant. I made this tiny cakes the day before my dinner party and warmed them in the microwave prior to serving. Instead of dusting with powder suger I whipped up some cream and served that on top of cakes with additional raspberries. What a hit with my guests, and now they all want the recipe!!

Great w/ Nestle Treasures

This recipe is very easy and comes out great. I originally printed this recipe when it it suggested using Nestle Treasures (the ones with the fudgy chocolate centers). I'm not sure if they still make them, but when the little cakes were done, they had warm gooey chocolate centers that everyone loved. Definitely recommend.

Not just for Holidays

I love raspberry and chocolate and I like to make muffins because it helps me to limit my portions. I couldn't get the Jingles so I put 4-5 chips in the middle of the muffins instead. These muffins are sweet, tender and fruity with a nice chocolate surprise in the middle. When eaten warm the chocolate melts right in your mouth. Delicious!

These mini cakes are a great elegant dessert. Quick and easy to make with minimal prep time. I made these for a dinner party and everyone loved them. Whoever thought that an inverted cupcake could be such a nice dessert for an elegant dinner? The presentation of the the cakes sprinkled with powdered sugar is also very pretty.

Instead of just sticking with raspberries I also made them with apricots, blueberries, strawberries and banana. Took them to work and were all gone before the morning tucker truck had arrived. Because we don't have that type of chocolates over here I added chocolates with either a fruit or mint filling or just plain chocolates. Nice and fluffy too, best eaten when warm as the chocolate oozes out, add icecream and cream as it also goes beautifully..........yum!!!
